Banana and coconut flour waffles

At Fitty HQ, we recently became the proud owners of a waffle iron. If you're also a fan of waffles, you'll know how exciting this is. We've been experimenting with sweet potato waffles, savoury waffles, sweet waffles...ALL THE WAFFLES.

Anyway, one of our favourite recipes is this coconut flour and banana number. We've used Rawco's coconut flour (there's a whole full sized pouch in November's box, The Aiden), which is a healthy alternative to wheat and other grain flours. It's ground from dried, de-fatted coconut meat, making it high in fibre, low in digestible carbohydrates, as well as being dairy-free, gluten-free, grain-free. 

Banana and coconut flour waffles

You'll need:
- 3 large eggs
- 2 bananas
- 1 tsp vanilla extract
- 3 1/2 tbsp Rawco coconut flour 
- ½ tsp cinnamon
- ½ tsp baking soda
- ¼ tsp Himalayan salt 


To make them:
Turn on your waffle iron, and as it heats up, throw all the ingredients into a blender and blitz until smooth. Then pour the batter into the waffle iron (NB: all irons are different, so the amount of batter and cooking time will vary). We cook ours for 4 minutes, then flip the iron and cook for another 4 minutes. 

Then the best part: toppings. We've kept it simple and used The Coconut Collaborative coconut yoghurt, Punch Foods cinnamon spice super seeds, a drizzle of honey, and a dollop of Wyldsson healthy nutella. YUM.
