If you love carrot cake like it's one of your own, then this is for you. These healthy carrot cake balls taste like the most decadent, moist carrot cake you've ever had...and they're nutritious. We've made them using Pics Peanut Butter from The Jett Box, and you can too.
1 cup oats
1/2 cup almond meal (you can just blitz almonds in a blender to make this)
1/3 shredded coconut
1/4 cup pecans
1/2 cup grated carrots
4 tbsp peanut butter
1 cup medjool dates
2 tbsp raw cacao powder
1 tsp ground cinnamon
Extra peanut butter to dribble on top
Put everything in a blender (except the extra peanut butter) and blitz to bring everything together, but enough to leave a nice texture in there. Then get messy rolling the raw cake batter into balls with your paws. Drizzle on the extra PB, and enjoy. Store in the fridge in a sealed container for up to two weeks (like they'll last that long...).
