Today was a pretty big day for us, and it will be for you too, because you're about to discover THIS simple vegan recipe. It sits somewhere between ice cream and smoothie, and it serves two (unless you're really hungry...no judging).
Why's cauliflower is a big deal?
As delicious as smoothies are, they're usually full of fruit, making them crazy high in sugar. Try using frozen cauliflower as a healthy swap to the typical banana – you can't taste it, and it's packed full of nutrients. Cauli is low in carbs, and high in vitamin C, potassium, calcium, and fiber. It also has a moderate amount of vitamin K1 and contains sulforaphane, glucosinolates, carotenoids, and indole-3-carbinol (see what that all means here). What you'll need:
1/3 cup macadamia nuts
1 cup frozen cauliflower (we chop and steam ours, then freeze it in handy little bags)
1 scoop vanilla vegan protein powder (we've used Neat Nutrition)
3/4 cup almond milk
1/2 cup fresh mint leaves
2 tbsp cacao nibs
Small squirt of liquid stevia (if needed)
Chuck everything in your blender and blitz away. If you're being fancy, top with more cacao nibs, coconut, mint...anything you fancy.
